1 cup Old Mill White Self-Rising Cornmeal
1/4 cup Old Mill Self-Rising Flour
1/4 tsp. salt
1 egg, well beaten
1 medium yellow summer squash or approximately 1 cup grated or thinly diced
1 small onion or approximately 1/2 cup diced fine
3/4 cup buttermilk
Directions:
Mix all ingredients together and drop by heaping tablespoons into skillet of hot oil. Fry on medium heat until browned on one side, flip and brown other side. Makes approximately 12 patties (small pancake size).
