Cranberry Pecan Stuffed Pork Loin
Ingredients:

1/2 cup Old Mill Cranberry Orange Marmalade or Cranberry Pecan Preserves
2 tbsp. Soy Sauce
2 Pork Tenderloins 3/4 - 1 lb. each
1/4 tsp. salt

Directions:

Combine soy sauce with the marmalade/ preserves. Sprinkle salt onto pork. Place in sprayed baking dish. Drizzle about half of soy sauce mixture over pork, (or may roll up & secure with toothpick after spreading with marmalade or preserves mixture). Save remaining soy sauce mixture to pour over top about half way through cooking time. Bake uncovered at 350 degrees for 45-60 minutes or until meat thermometer reaches 160 degrees. (May need to cover last few minutes of baking to prevent browning too much.) Allow to stand a few minutes before cutting.
