Directions:
To solve the problem of leathery, underseasoned fried chicken, we brined and then air-dried the chicken parts before frying.
Pour enough breading into a bag to generously coat pieces of chicken. Drip in wet pieces of chicken or food. Shake until pieces are well coated. Pan fry in vegetable oil until done.
Note: Seasoning also good to use for fried green tomatoes, catfish, and fried okra.
