Garlic Cheese Grits Souffle
Ingredients:

1 package Old Mill Garlic Cheese Grits
4 cups cold water
1/2 cup butter or margarine
1/2 cup milk
1 cup shredded cheese (we use Monterey- Colby Jack blend)
3 eggs, well beaten (Cool mixture slightly before adding eggs to prevent curdling)

Directions:

Whisk together grits and water and bring to a boil. Turn heat down & simmer about 10 minutes, stirring occasionally. Remove from heat & add remaining ingredients. Mix well & pour into 9 x 11 greased baking dish (or may use 2, 8 x 8 dishes and refrigerate one to bake later). Sprinkle extra cheese on top & bake at 350 degrees for approximately 1 hour.


Note: shrimp may be added to recipe for special dishes.
