Yummy Sweet Potato Bread
Ingredients:

2 eggs, well beaten
1 cup sugar
1/3 cup oil
1 cup mashed sweet potatoes (canned ones are fine to use)
3 cups Old Mill Sweet Potato Pancake Mix
¼ tsp. baking soda
¼ tsp. baking powder
¼ tsp. salt
1 tsp. cinnamon
1/3 cup milk
½ cup chopped pecans

Directions:

Beat eggs, sugar & oil together. Blend in mashed sweet potatoes. In another bowl mix together pancake mix, soda, baking powder, salt & cinnamon. Alternately add pancake mix with milk to egg mixture and mix until well blended. Pour into greased Old Mill Bread Baker & place into COLD oven. Turn temperature to 350 degrees & bake for approximately 1 hour, 10 minutes or until inserted toothpick comes out clean. Cool 10-15 minutes before inverting onto serving plate. (If using regular loaf pan, preheat oven to 350 degrees & continue to bake approximately 60-70 minutes.)
